Chicken & Waffle Bites with Snack'n Waffles

When my friend told me she wanted to create a special chicken and waffle recipe for my baby shower, I knew EXACTLY the brand of waffles I wanted to have: Snack'n Waffles! Special shoutout to the Snack'n Waffle team for gifting us all the waffles we needed for our event (I'll be sharing how I made our special kids boxes with their Blueberry flavor soon)!

For those of you who have never heard of Snack'n Waffles, they're a brand committed to making you and your family's breakfast adventures packed with more protein and less sugar to help you have a healthier start to your day! Each waffle has 6 grams of protein, with no artificial flavors, preservatives or high fructose syrup. And since they're already flavored (Buttery Maple, Wild Blueberry and Sweet Cinnamon) you can cut out the extra syrup to help reduce your sugar intake by 42%! For this recipe, we used the Buttery Maple flavored Snack'n Waffles, that found in your local Safeway and Costco. Each waffle comes individually wrapped, which makes them great for storage and on-the-go portions!

Chicken & Waffle Bites with Snack'n Waffles

Ingredients
  

Buttermilk Fried Chicken

  • 4 Large Chicken Breasts
  • 4 cups Buttermilk
  • 2 tbsps Onion Powder
  • 2 tbsps Garlic Powder
  • 2 tbsps Smoked Paprika
  • 2 Lemons (you'll only need the zest)
  • 4 cups Panko

Rosemary Honey Butter

  • 2 sticks Butter
  • 3 sprigs Rosemary
  • 2-3 tbsps Honey

Other

  • 4 boxes Snack'n Waffles in Buttery Maple flavor (6 waffles to a box)
  • 1/4 cup Fresh Parsley (finely chopped)
  • Maple Syrup

Instructions
 

Brining the chicken

  • In a large mixing bowl, combine buttermilk, seasoning, and lemon zest. Cut chicken breast thickness by half and cut into square, bite-sized pieces. Each breast should produce about 20-24 bite-sized pieces.
  • Toss chicken breast into large ziplock bag(s) with buttermilk mixture and let brine for at least 4 hours, or overnight.
  • Strain buttermilk and coat each piece in panko.

Making the butter

  • Leave sticks of butter out until at room temp and pliable. Finely chop fresh rosemary.
  • In a bowl, mix together butter, rosemary and honey until well combined.

Cooking the Chicken & Waffle Bites

  • Preheat oven to 400 degrees. Finely chop parsely. Bake Snack'n Waffles whole, flat and in single layers inside the oven for about 5-8 minutes (or until crispy).
  • In a large frying pan, heat to medium-high (around level 7 or 8). Add vegetable oil once heated. Fry chicken and waffle bites.
  • Cut waffles into quarters. Brush waffles with butter mixture. Place chicken bites onto waffles. Drizzle a little bit of syrup over the chicken and waffle stack. Garnish with parsley.
  • Serve on your favorite platters!
