Getting back into cooking with HelloFresh

I am a planner. I plan things to such an extreme extent that I will set up a Google Drive folder of files, a binder of files and a separate section in my build-your-own planner for the one thing. I'll do sketches and notes and mull over it for far longer than is necessary. But when it comes to cooking, I feel like I'm just wandering around a grocery store hoping I'm getting what I need and praying that I won't let all this crap die over the next week. Usually, it just dies on my counter or in my fridge and is never touched.

That's one of the things I love about HelloFresh; I don't need to worry about having the wrong amount of ingredients, and everything is easy enough for me to power through in less than an hour. For the summer, I signed up for a new subscription of the service to use until I feel comfortable enough buying the proper ingredients for two people to eat through. They say their meals can feed up to 4 people but, in my experience, I feel like they will feed more along the lines of 3 people if you don't make anything else. There's usually enough food left over that one of us can have it for the next day.

I very much recommend getting a HelloFresh subscription if you're struggling to get in the groove of cooking and trying to understand shopping portions. It's a great way to get in the mind set of seeing the food in the store, envisioning the food in your mind and knowing exactly how much to get. It may sound silly to some, but you'd be surprised as to how many people I know who really do struggle with this task.

HelloFresh came in handy last summer when we first moved into the house we're out now, when we had no time to do grocery shopping and meal planning. We usually only get 3 meals a week, which only sets me back about $60 each week. That might seem like a lot, but we were wasting close to $150 a month because I don't understand grocery shopping. Our local grocery stores sell produce in large quantities and I can only freeze so much food for future use.

Another plus about HelloFresh in comparison to some of the other subscriptions, is that their recipes are a little bit more enticing to picky eaters or those with food allergies like me (milk). Though we can get low-key adventurous at times with our meals, there is still quite a list of foods we're not willing to eat. They consistently have 3-5 meals that I would love to take home and try out.

Each box has the recipe cards inside for current and future use. This Kiwi Salsa and Steak Fajitas is definitely one for the books. The meat they used for the recipe was stir fry beef. I would have never thought of using that for fajitas!

The only ingredients you will ever need to provide are salt (I use Himalayan Pink Salt), pepper (which I load the f up on because I'm crazy), and olive oil. There have been a ton of recipes where they don't have you add anything but these 3 items and the food tastes amazing! Other times, they will provide you a tiny little packet to throw in. All of the seasoning they add are things you can easily buy at the store.

Lastly, how you assemble the food is totally up to you. I forgot that these were fajitas and made big freaking tacos instead. And you know what? It was delicious af. My hubby added jarred jalapenos and sour cream to his. Also, pretty sure this was the first time I've ever had kidney beans (at least on purpose). Because of HelloFresh, I can now say that I have made Mango Salsa and Kiwi Salsa, and that I love both.
