Simple Avocado Toast and Egg
Avocado toast is a simple recipe that can be altered 7 ways from Sunday depending on your preferences. For the past 2 years, I've gotten pretty simple with my style and thought it would be fun to share this easy recipe with you!
What you'll need:
- A slice of bread
- Half an avocado
- 1 egg (just the white part)
- A quarter to half of a roma tomato
- Chili powder (to taste)
- Paprika (to taste)
- Pepper (to taste)
If you plan on eating 2 slices of toast, just double the ingredients needed.
On this particular day, I used a slice of wheat bread, but I normally use two slices of my homemade sandwich bread (a recipe I will be sharing soon)! I recommend waiting until your egg is almost ready for use before toasting your bread if you like your toast and egg to both be warm. Toast to your liking.
Prepare your egg by either hard boiling it and discarding the yolk, or by placing it in a small pan and frying it. If I fry my egg, like I did today, I don't scramble it. Just use a little Olive Oil Pam, drop the white in, and flip when ready. You can add your pepper now or wait to add it to the avocado spread later. If you decide to hard boil the egg, be sure to thinly slice or dice up the whites to make it easier to eat on the toast.
Create your avocado spread by scooping half (or all) of your avocado into a small bowl and smash with a fork or spoon. Dice your tomato into small pieces; the bigger the pieces, the harder it is to get some in every bite. You could do thin slices, but I've found dicing the tomato makes it far less messy. Add your tomatoes to the mashed avocado, as well as a few dashes of chili powder, paprika and pepper. Mix until well combined.
Once your toast is ready, spread the avocado mix evenly across. Place your egg on top, and enjoy!
